Boba:
Ingredients:
1 cup boiling water
1 cup brown sugar
2.5 cup tapioca flour
Procedure
1. Melt the brown sugar in water, then add the tapioca starch
2. Cook until the mixture forms a dough on low heat
3. Knead the dough while it is warm
4. Roll dough into small round ball shapes
Tip: Keep the boba balls small, because they will expand and be difficult to drink through a straw.

Cooking the Boba
1. Bring 16 cups of water to a boil
2. Add the small dough balls and reduce heat to a simmer
3. Cook for 15 minutes and then put boba in ice water

Flavoring the Boba
1. In a separate pan boil 4 cups of water and 1.5 cups of brown sugar
2. Add cooked boba, simmer for 20 minutes
3. Remove from heat and let it chill for 20 minutes.
Recommendation: If you want to skip making boba from scratch, they sell pre-made pearls, which is a lot less time consuming and there is a lot less variability.
